Take 1 - Peanut Butter and Jelly Sandwich
Colleen and I have been working on getting Christopher to eat better by involving him in the process of preparing the food that he eats. So far this has been met with a lot of success. These pictures were of Christopher making his own peanut butter and jelly sandwich. He loved it.
I think he liked it
Take 2 - Peanut Butter Cookies
Our next project was baking cookies. I found a very easy, 4-ingredient, peanut butter cookie recipe and decided to try it with Christopher tonight. It is a Paula Dean recipe, so I subbed her calling for the greased pan with cooking spray and the sugar with Splenda. The only ingredients called for were 1 c. peanut butter, 1 c. sugar (Splenda), 1 tsp. vanilla extract, and 1 large egg. I measured out and separated all the ingredients and let him pour and mix them. He had a lot of fun, although he did require a lot of reminders and prompts not to lick the spoon....at least until we were done. It was a blast. Maybe next time we'll get away from the peanut butter staple we've apparently got going here!

Awesome idea and great pics!
ReplyDeleteWhat a great idea! I love Christopher's face while he's making the cookies. And he's got some great technique going with the fork! Expertly done, young man. We may have to try this at our house, although I'm afraid if we do Zooey will want to make cookies every night until the end of time.
ReplyDeletehe did more mashing with the fork than putting criss-crossing patterns quite honestly, but it was very fun. Can't wait until Matthew's old enough to give this a whirl with both of them. I think we're going to have them make Rice Krispie treats for Halloween, too...just trying to figure out how we're going to do it. Colleen wants to make them "Halloween colors", but to do it without making a complete mess of things might be somewhat challenging. If you want to try it with Zooey, it's a very easy recipe.
ReplyDeleteIngredients
1 cup peanut butter, creamy or crunchy
1 1/3 cups baking sugar replacement (recommended: Splenda)
1 egg
1 teaspoon vanilla extract
Directions
Preheat the oven to 350 degrees F. Grease a large baking sheet.
In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement. Cool slightly before removing from pan.
They're pretty sweet though, so you can either reduce the amount of Splenda by 1/4 to 1/3 cup or use 1 full cup of real sugar.
Give it a shot and let me know how it works out.
The semi-sweet chocolate chips were added as a bonus! Just 1/4 or 1/2 cup...or you can add a Hershey's kiss in the middle of them right out of the oven...we're going to try that next time!
